1.5 lbs ground turkey
2 cups sweet potatoes, peeled and cubed into 1” pieces
1 cup onion

1.5 teaspoon cumin
1.5 teaspoon chili powder
1 teaspoon cocoa powder
1/2 teaspoon cinnamon
1/2 teaspoon paprika
1 bay leaf
CANNED GOODS
10 oz can Rotel tomatoes, mild
14.5 oz can fire-roasted tomatoes
15 oz can beans, pinto, drained and rinsed
8 oz tomato sauce
3/4 cup water

fresh cilantro, stems removed, chopped
sour cream
shredded cheddar cheese
hot sauce, like Cholulu
crusty bread
Instructions
- Prepare the spice mixture. Combine spices in a small bowl and set aside.
- Brown the turkey. Break apart the turkey into small pieces and brown all the way through over medium heat, then drain any excess fat into a disposable container. Do not put grease down the drain!
- Add the onion, garlic, and spices. Cook until the onion is translucent and the spices are incorporated, 10-15 minutes.
- Add all of the canned ingredients and the sweet potato. Stir together gently and simmer on low for 30-40 minutes until the potatoes are soft. Remove bay leaf and serve.
