What's So Special?

This simple dish is so much better when you make it fresh rather than buy a prepared sauce.Β 

Ingredients and Substitutions

Vegetables

Freshly prepared cucumber, garlic, and dill are the key ingredients. Use a vegetable chopper to get uniform pieces of cucumber.Β 

Greek Yogurt

Be sure to buy the full-fat yogurt; we tried it with no-fat yogurt, and the sauce was too tart.

Garlic

Every week, as part of my Meal Prep Routine, I dice a large batch of garlic. It’s a tremendous time saver. It’s a little tedious to separate and peel two bulbs of garlic, but it saves time later.

Put the peeled cloves into a small food processor and grind until you have tiny pieces. It yields about 4 ounces of diced garlic that is stored in a glass jar covered in olive oil. It lasts at least a week.

Substitution Formula: 1/2 a teaspoon of ground garlic is equivalent to one clove.Β

How to Make Tzatziki sauce

The process is very easy! After you chop the cucumber, there isn’t much to it. It’s a five-minute sauce.

Ingredients

1 cup whole-fat Greek Yogurt

1 tablespoon lemon juice, freshly squeezed

1/2 cup of cucumber, seeded, chopped into 1/4” pieces – reserve a tablespoon for garnish

2 cloves garlic, diced finely

2 tablespoons extra virgin olive oil

1 tablespoon of fresh dill, remove large stems and chopped into small pieces

1 teaspoon crushed red pepper, optional

kosher salt and freshly ground pepper

Instructions

  1. Gather and prepare all of the ingredients
  2. In a medium bowl, whisk together the yogurt, lemon juice, olive oil, garlic, and spices.
  3. Then gently fold in the cucumber and dill, reserving some of each for garnish.
  4. Transfer to a serving dish and garnish with the remaining dill and cucumber. then serve.
