Ingredients
1 cup whole-fat Greek Yogurt
1 tablespoon lemon juice, freshly squeezed
1/2 cup of cucumber, seeded, chopped into 1/4” pieces – reserve a tablespoon for garnish
2 cloves garlic, diced finely
2 tablespoons extra virgin olive oil
1 tablespoon of fresh dill, remove large stems and chopped into small pieces
1 teaspoon crushed red pepper, optional
kosher salt and freshly ground pepper
Instructions
- Gather and prepare all of the ingredients
- In a medium bowl, whisk together the yogurt, lemon juice, olive oil, garlic, and spices.
- Then gently fold in the cucumber and dill, reserving some of each for garnish.
- Transfer to a serving dish and garnish with the remaining dill and cucumber. then serve.
