What's So Special?

This soup starts with a Soffritto base and has a hearty, homemade flavor that is perfect for a cold winter day. It starts with everything in a slow cooker, which simmers for hours and hours, making the house smell delicious!

Ingredients and Substitutions

Ham

This recipe starts with a large ham bone with most of the meat cut off. During cooking, the bone becomes clean, and the flavors are incorporated.

Soffritto

There are three main ingredients: onions, carrots, and celery. Then garlic and oil (or butter) are added at the end. I like to keep some cooked and ready to go in the freezer, but in this case, you might want bigger chunks of vegetables in the soup, so you might want to chop them into larger pieces.

White Beans

It is best to soak dried beans overnight and add them to the soup, but canned beans are an option, as well.
