Ham Bone Soup

Did anyone get a Spiral-Cut Ham this holiday season? Are you wondering what to do with the bone after you have eaten most of the ham? You may have extra ham as well… here is a recipe to make use of all the leftovers.

Ingredients

ham bone

1 lb ham, chopped into bite-sized chunks

16 ounces dried great northern beans, soaked overnight, or about 68 hours

1 medium onion, diced

23 carrots, diced

2 celery stalks, diced

34 cloves garlic, minced

2 bay leaves

1 teaspoon white pepper

2 teaspoons fresh thyme, stems removed

Optional Ingredients to add before serving

1 tablespoon of brown sugar

1 teaspoon of apple cider vinegar

Instructions

  1. Soak the beans overnight, or for 6-8 hours. In the morning, drain the beans and rinse thoroughly
  2. Add all of the ingredients to the slow cooker and set to LOW for 10-24 hours; it gets better and better!
  3. Before serving, remove the ham bone. Shred any remaining meat and return it to the soup. Discard the bone. Taste and adjust the salt level. Stir in brown sugar and vinegar.
  4. For thicker soup, take out a cup of beans, smash them, then add them back to the soup
